Udon noodles are made by mixing flour with lightly salted water, then kneading, stretching, and cutting the dough into thin strips. It is said that udon also came to Japan from China around the Nara period. One of the interesting things about udon is that the thickness and hardness of the noodles varies from region to region. Udon Kitanoya will serve the most authentic udon creations using high quality ingredients from family recipes passed down for generations. The menu consists of 15 different types of hot and cold udon dishes alongside a variety of Japanese snacks. Dashi, the essence of Japanese ingredients, is the heart and soul of Kitanoya’s udon. We make our dashi broth by using high quality ingredients including Japanese Kombu and 4 different types of dried fish such as tuna, mackerel, sardine and bonito. It is the perfect balance to enhance the delicate, yet full-bodied umami taste. Some of the more popular dishes include Kake Udon which is a udon noodles cooked in dashi stock topped with imitation crab, scallions, and seaweed. Also on the menu is Niku Udon prepared by slow simmering beef in sweet soy dashi stock, and paired with a soft boiled egg. Other popular dishes include Curry Udon, Shrimp Tempura Udon and Vegetable Kakiage Udon.
